Why should you choose our Vinegar?We are not producers, but selectors of Balsamic Vinegar of Modena.We are not tied to the production of a single Acetaia (Vinegar cellar); our continuous search for excellence allows us to choose only the best producers, year after year.ABTM - Traditional Balsamic Vinegar of Modena D.O.P.For this vinegar there is a rigid and precise production specification.The Consortium for the protection of ABTM and the Consortium of ancient ABTM Vinegar cellars guarantee the quality of the product by checking all the stages of production and by bottling it in the only approved package: the exclusive 100 ml bottle designed by the artist Giugiaro; on each single bottle there is a numbered warranty seal.The real Traditional Balsamic Vinegar of Modena D.O.P. cannot be bottled directly by the manufacturer and cannot be packaged in any other container with a different shape or size.Ingredients permitted by the law: cooked must of selected grapes coming from the provinces of Modena and Reggio Emilia.Aging period: according to the law, Traditional Balsamic Vinegar of Modena D.O.P. requires an aging period of minimum 12 years.L- Originale offers Vinegars aged 12 and 25 years.ABM- Balsamic Vinegar of Modena I.G.P.Under this label you will find on the market products with heterogeneous characteristics. In fact, the production could be on a low-cost industrial scale or artisanal, according to ancient traditions and procedures.Balsamic Vinegar of Modena I.G.P. is bottled directly by the producer, who is not obliged to bottle it in a specific package; the Vinegar can be packaged in 250, 500 ml, 1 lt., 2 lt. or 5lt. glass or plastic containers.Ingredients permitted by the law: cooked must, wine vinegar, caramel (max 2%).Aging period: From a legal point of view, it is foreseen a minimum aging period of only 60 days.L-Originale selects and brings to your table only artisanal Balsamic Vinegar of Modena I.G.P., aged 6, 8 and 12 years.CondimentsAll the products of this category are bottled directly by the producer and by law, they cannot be labeled as Aceto.Ingredients permitted by the law: cooked must, wine vinegar, caramel, fructose, glucose, thickeners.Aging period: By law, there is no minimum aging period required.As for Balsamic Vinegar of Modena P.G.I. there is no restriction concerning the type of package and its size.Our Condiments represent the highest expression of the craftsmanship of the producer.In fact, we only offer Balsamic condiments aged 15, 25 and 30 years, obtained exclusively from cooked must and produced with the same methods of production of ABTM.The same product, if bottled by the ABTM Consortium, would be marketed and sold as Traditional Balsamic Vinegar of Modena D.O.P.
